Vegetarian Quesadilla

Today's post is a simple yet healthy Vegetarian Quesadilla. Basically, Quesadilla is a Mexican dish. We can also call it as a kind of Taco. A traditional Mexican one comes with a lot of Cheese. Being health-conscious, I used very minimum cheese and also prepared tortilla with whole wheat flour. There is no sauting required. Just tuck in the raw vegetables inside the tortilla along with the cooked Kidney beans and sprinkle some cheese. Viola ! A yummy Quesadilla is ready 😅.


Ingredients:

Whole Wheat Tortillas

Red Kidney Beans 1 cup

Onion 1

Capsicum 1

Tomato 1

Grated Cheese

Oregano Powder

Salt to taste


Method:

1. Soak the kidney beans overnight for 12 to 24 hrs.

2. Pressure cook them for 4 whistles. Once done, mash them a little.

3. Chop onion, tomato, capsicum into small pieces.

4. Mix the above veggie mixture along with the mashed and cooked kidney beans.

5. Add salt and mix them thoroughly. The filling is ready.

6. Prepare the whole wheat tortilla. To prepare this,just knead the whole wheat flour with salt and water into a soft dough. Roll it and prepare the tortillas. (It is basically like preparing a Chapathi. Note that the Chapathi needs to be half cooked and not completely, as we would be cooking again after placing the filling.)

7. Place the stuffing on one side of the tortilla. Add cheese and oregano powder.

8. Fold the other half of the tortilla on top and press it gently.

9. Cook in tava in a medium flame for 30 seconds.

10. Cut it and serve hot.
