Zucchini Dal



Tried my hands on Zucchini for the first time and it didn't disappoint me 😅. Zucchini has lot of health benefits. To name a few:

👉 It is the best source of dietary fiber and low in carbohydrates. So it is good for weight management.

👉 High in anti-oxidants.

👉 Helps to control diabetes.

👉 Slows down aging.


This is a no onion no garlic dal. However you can add them if you wish to.


Ingredients:


Zucchini 1 (I used yellow zucchini)

Tomato 1 big

Tur dal 1/2 cup

Moong Dal 1/2 cup

Turmeric Powder 1 tsp

Chilli Powder 1 tsp

Salt to taste


To dry roast and grind:


Cardamom 1 pod

Cumin Seeds 1/2 tsp

Coriander Seeds 1/2 tsp

Red Chilli 2


To temper:


Mustard Seeds 1 tsp

Cumin Seeds 1 tsp

Ginger 1 inch

Green Chilli 1


To garnish:


Coriander Leaves

Kasuri methi leaves


Method:


1. Slice the zucchini into small pieces(no need to peel the skin).

2. Add zucchini, chopped tomatoes, turmeric powder to a vessel along with tur dal and moong dal. Pressure cook them for four whistles.

3. Dry roast the ingredients given under "To dry roast and grind". Grind it into a powder without adding water. Keep it aside.

4. Once done, heat oil in a pan. Add mustard seeds, cumin seeds, ginger and garlic. Allow the seeds to splutter.

5. Add the above tadka to the cooked zucchini dal.

6. Add salt, ground powder from step 3, chilli powder to the dal. Adjust the consistency by adding water if the dal is thick.

7. Let it boil in medium flame for couple of minutes.

8. Switch off the flame.

9. Garnish with coriander leaves and kasuri methi leaves.
