Aloo Curry

Looking for a simple yet delicious Vegan curry? Then this one is for you. So today's post is a gravy made out of baby potatoes. The baby potatoes are shallow fried and cooked in a tomato based gravy with lots of Indian spices. Pairs well with hot steamed basmati rice or even roti.



Ingredients:


Baby Potatoes

Onion 1

Tomato 4

Mustard Seeds 1 tsp

Cumin Seeds 1/2 tsp

Green Chilli 1

Ginger 1 inch

Garlic 1 or 2 pods

Coriander leaves few

Garam Masala Powder 1 tsp

Amchur Powder 1/2 tsp

Coriander Powder 1 tsp


Method:

  1. Pressure cook baby potatoes until soft.

  2. Peel the skin of the potatoes. Dry them completely and shallow fry them in oil until brown. Keep them aside.

  3. Puree the tomatoes into a fine paste. Keep it aside.

  4. Heat oil in a pan. Add mustard seeds, cumin seeds & allow them to splutter.

  5. Once hot, add green chilli, garlic, ginger & coriander leaves. Saute them for a minute.

  6. Add onions. Saute until they turn translucent.

  7. Add coriander powder, garam masala powder & amchur powder.

  8. Saute for a minute and add the tomato puree. Let it cook until the tomato gravy thickens.

  9. Add the fried potatoes, salt to it.

  10. Add a cup of water and simmer it for 5 minutes.

  11. Switch off the flame and garnish with coriander leaves.

  12. Serve hot with steamed basmati rice and enjoy ☺️.
