Looking for a simple yet delicious Vegan curry? Then this one is for you. So today's post is a gravy made out of baby potatoes. The baby potatoes are shallow fried and cooked in a tomato based gravy with lots of Indian spices. Pairs well with hot steamed basmati rice or even roti.

Ingredients:
Baby Potatoes
Onion 1
Tomato 4
Mustard Seeds 1 tsp
Cumin Seeds 1/2 tsp
Green Chilli 1
Ginger 1 inch
Garlic 1 or 2 pods
Coriander leaves few
Garam Masala Powder 1 tsp
Amchur Powder 1/2 tsp
Coriander Powder 1 tsp
Method:
Pressure cook baby potatoes until soft.
Peel the skin of the potatoes. Dry them completely and shallow fry them in oil until brown. Keep them aside.
Puree the tomatoes into a fine paste. Keep it aside.
Heat oil in a pan. Add mustard seeds, cumin seeds & allow them to splutter.
Once hot, add green chilli, garlic, ginger & coriander leaves. Saute them for a minute.
Add onions. Saute until they turn translucent.
Add coriander powder, garam masala powder & amchur powder.
Saute for a minute and add the tomato puree. Let it cook until the tomato gravy thickens.
Add the fried potatoes, salt to it.
Add a cup of water and simmer it for 5 minutes.
Switch off the flame and garnish with coriander leaves.
Serve hot with steamed basmati rice and enjoy ☺️.
