Baba Ganoush (Roasted Eggplant Dip)


Have you ever tried the middle eastern dip "Baba Ganoush"? Baba Ganoush is made by smoking/roasting eggplants and blending it with Tahini (a dip made by blending white hulled sesame seeds, oil and salt), garlic and spices.


The brinjal that I used for this dip is from my home garden 😃.




Ingredients:


1 big Eggplant

Garlic 1 or 2 pods

Oil (I used Sesame Oil)

Tahini 2 tsp

Lemon juice 1 tsp

Cumin powder 1 tsp

Chilli powder 1 tsp

Coriander leaves


Method:

  1. Roast the eggplant on flame. Once done, immerse it in water. This will help in easy removal of the eggplant skin.

  2. Then peel out the skin and mash the eggplant with a fork.

  3. To it add garlic, tahini, oil, lemon juice, cumin powder and chilli powder.

  4. Garnish it with coriander leaves.

  5. Enjoy with pita bread or raw veggies such as carrots, cucumber.


How to make tahini:

  1. Dry roast the sesame seeds.

  2. Blend the roasted sesame seeds coarsely first.

  3. Then add oil and salt and grind it into a smooth creamy paste.
