I love sweet potatoes 🍠 in any form. How about you 😅? Sweet potatoes are a great source of fibre, vitamins and minerals. This stew is a very healthy vegetarian dish made in Mediterranean style.
Ingredients:
Sweet Potatoes 2
Carrot 1
Spinach 1 cup
Tomato 1
Onion 1
Tomato
Tomato puree
Garlic 1 or 2 pods
Coriander Powder 1 tsp
Cumin Powder 1 tsp
Turmeric Powder a pinch
Pepper 1 tsp
Salt to taste
Coriander leaves to garnish
Method:
1. Heat oil in a pan. Add garlic and saute it until the raw smell goes away.
2. Next add the onions. Saute it until they become translucent.
3. Next add the chopped carrots and sweet potatoes.
4. Add salt, pepper, coriander powder, cumin powder and turmeric powder.
5. Cook the veggies for 4 to 5 minutes in medium flame.
6. Next add the chopped tomatoes along with the tomato puree.
7. Simmer the flame. Cover the pan with the lid. Let the veggies and the spices blend well the tomato puree.
8. After the veggies are soft and blended with the tomatoes, open the lid. Add chopped spinach.
9. Once the spinach gets cooked, switch off.
10. Garnish with coriander leaves.
