Baingan Ka Bharta

Today's post is a classic North Indian Specialty from Punjab. Baingan means Brinjal and "Bharta" means mashed. So this is basically a gravy made out of mashed brinjal. The secret to making a good gravy depends on how well u grill the brinjal over the open flame.

This is because fiber reduces the amount of cholesterol that your body absorbs. In fact, the fiber, potassium, vitamin C, vitamin B-6, and antioxidants in eggplants all support heart health.


In addition to the heart health, eggplants also helps to improve bone health, prevents anemia and increases brain function.


The ingredients (such as garlic, sesame oil) used in this recipe are heart-friendly. Let's get on to the post.


Ingredients:


Eggplant 1 big

Onions 2

Tomato 1

Green Chilli 1

Ginger 1 inch

Garlic 1 or 2 pods

Coriander leaves

Red Chilli powder 1 tsp

Coriander Powder 1 tsp

Salt to taste

Sesame oil

Mustard Seeds 1 tsp

Cumin Seeds 1/2 tsp

Fennel Seeds 1/2 tsp


Method:

  1. Apply sesame oil over the eggplant and roast it over the gas flame. Once roasted completely, immerse it in water and keep it aside. Immersing in water makes it easy to peel the skin.

  2. Heat Sesame oil in a pan. Once hot, add mustard seeds, cumin seeds, fennel seeds.

  3. Once they splutter, add ginger, garlic, green chilli and coriander leaves. Saute them for a minute.

  4. Next add onions. Saute until translucent.

  5. Add tomatoes. Saute until they turn soft.

  6. In the meantime, peel the skin of the smoked eggplant. Mash it and keep it aside.

  7. Once the tomatoes turn soft, add the mashed smoked eggplant.

  8. Add salt, red chilli powder, coriander powder.

  9. Let them mix well with the eggplant.

  10. Once done, switch off the flame and garnish with coriander leaves.

This dish can be enjoyed with rotis, parathas and even plain rice too 😇
