Cauliflower Curry (Vegan)

Here is another curry using my favourite veggie "Cauliflower". I always love experimenting with Cauliflower and it never goes wrong 😅. Here, the cauliflower is cooked in coconut milk along with spices. This is a very healthy yet delicious curry.

Ingredients:


Cauliflower 1

Tomatoes 3 or 4

Coconut Milk 1/2 cup

Garlic 2 pods

Green Chilli 1

Turmeric Powder a pinch

Curry Powder 2 tsp

Pepper Powder 1 tsp

Cumin Powder 1 tsp

Chilli Powder 1 tsp

Cornflour 1 tsp

Salt to taste


Method:

  • Immerse Cauliflower florets in hot water (with a pinch of salt and turmeric powder) for 15 minutes.

  • Grind tomatoes into a fine paste.

  • Heat oil in a pan. Add cumin seeds and allow it to splutter.

  • Add garlic, green chilli and saute them for 30 seconds.

  • Add the cauliflower florets and saute for a minute.

  • Next add chilli powder, cumin powder, turmeric powder, curry powder, pepper powder and salt. Mix well.

  • Add coconut milk. Let the cauliflower and the spices blend well with the coconut milk. Allow it to simmer for 5 to 7 minutes.

  • Mix cornflour in water and pour it into the gravy. This is done to thicken the gravy. Allow it to boil for 2 to 3 minutes.

  • Switch off the flame. Serve hot with plain rice. I served it with Jeera Rice.
