Cauliflower Curry (Vegan)

Here is another curry using my favourite veggie "Cauliflower". I always love experimenting with Cauliflower and it never goes wrong 😅. Here, the cauliflower is cooked in coconut milk along with spices. This is a very healthy yet delicious curry.
*** Recipe ***
Ingredients:
Cauliflower 1
Tomatoes 3 or 4
Coconut Milk 1/2 cup
Garlic 2 pods
Green Chilli 1
Turmeric Powder a pinch
Curry Powder 2 tsp
Pepper Powder 1 tsp
Cumin Powder 1 tsp
Chilli Powder 1 tsp
Cornflour 1 tsp
Salt to taste
Method:
Immerse Cauliflower florets in hot water (with a pinch of salt and turmeric powder) for 15 minutes.
Grind tomatoes into a fine paste.
Heat oil in a pan. Add cumin seeds and allow it to splutter.
Add garlic, green chilli and saute them for 30 seconds.
Add the cauliflower florets and saute for a minute.
Next add chilli powder, cumin powder, turmeric powder, curry powder, pepper powder and salt. Mix well.
Add coconut milk. Let the cauliflower and the spices blend well with the coconut milk. Allow it to simmer for 5 to 7 minutes.
Mix cornflour in water and pour it into the gravy. This is done to thicken the gravy. Allow it to boil for 2 to 3 minutes.
Switch off the flame. Serve hot with plain rice. I served it with Jeera Rice.
