It is a very pleasant weather in the evening in Chennai for the past two days. A nice weather calls for some good food. And to me, the Vegetable that satisfies my hunger-craving is Cauliflower š. It is a veggie that I always relish. Do you like dishes with Cauliflower? Lemme know.
So today I made a Sabzi using Cauliflower as a side dish for roti. Here the Cauliflower is simmered in a simple Onion-tomato gravy and flavored with Indian Spices. How cool is this š .
Let's get on to the post.
Ingredients:
Cauliflower Florets 1 cup
Butter 2 tsp
Onions 2
Tomatoes 3
Green Chilli 1
Ginger 1 inch
Garam Masala powder 1 tsp
Red Chilli powder 1/2 tsp
Bay Leaf 1
Cumin Seeds 1 tsp
Milk 1 cup
Kasuri Methi Leaves few
Coriander leaves few
Salt to taste
Method:
Immerse Cauliflower florets in hot water (with a pinch of salt and turmeric powder) for 15 minutes.
Take chopped onions, tomatoes, green chilli, ginger, coriander leaves and kasuri methi leaves in a pan. Add 2 tsp of butter and heat the pan.
Once the butter starts melting, add turmeric powder, garam masala powder, red chilli powder, salt. Mix well.
Add a cup of water and let the gravy simmer for 10 minutes.
Switch off the flame, allow it to cool and grind into a smooth paste.
Add oil to a pan. When hot, add cumin seeds, bay leaf. Once the seeds start spluttering, add the ground paste.
Saute until the gravy starts thickening
Add boiled cauliflower florets (step 1).
Mix well and add a cup of milk.
Simmer for 5 minutes.
Garnish with coriander leaves and kasuri methi leaves.
