Green Peas Sabji in roasted Tomato-Red Capsicum Gravy

Today I share with you a simple Green Peas Sabji, that is sauted in a roasted tomato & red capsicum based gravy. This is completely #vegan. Also, this is a no onion no garlic recipe. The flavours come from the roasted red bell pepper and ginger.


Ingredients:


Green Peas 1 cup

Tomato 3

Red Capsicum 1

Ginger 1 inch

Green Chilli 1

Cashewnuts handful

Coriander leaves few

Salt to taste

Mustard Seeds 1 tsp

Cumin Seeds 1/2 tsp

Oil

Kasuri Methi Leaves few


Method:

  • Boil green peas until soft.

  • Soak cashewnuts in hot water for 15 minutes. Then grind it into a smooth paste and keep it aside.

  • Heat oil in a pan. Add ginger, green chilli, coriander leaves. Saute them for a minute.

  • Add chopped tomatoes, red capsicum & salt. Saute them for 5 to 7 minutes. Switch off the flame, allow it to cool & grind it into a smooth paste.

  • Heat oil in a pan. Add mustard seeds, cumin seeds. When they splutter, add the ground tomato-capsicum gravy. Saute them until the gravy thickens.

  • Next add cashewnut paste. This makes the gravy rich and creamy.

  • Add the boiled green peas. Let it simmer for 5 minutes in medium flame.

  • Switch off, garnish with Kasuri methi leaves.

  • Serve it hot with roti.



Variations:


This is completely Vegan. However you can:

👉 make it even more rich by making a paste of cashewnuts soaked in milk instead of hot water

👉 use butter/ghee instead of oil
