Immunity Boosting Soup


Today's post is a simple immunity boosting soup which is more delicious and at the same time healthy. This is a no onion no garlic soup. However if you wish to add onions and garlic, you can very well add them. This soup is just made of three simple ingredients- beetroot, carrot and tomato. With the added flavour of ginger and coriander leaves, this is indeed a delight to have.


Beetroots are full of powerful antioxidants, rich in Vitamin C and helps in the absorption of iron.

🥕 Carrots are a good source of beta carotene, fiber, Vitamin K1, potassium and anti-oxidants.

🍅 Tomatoes are the major source of antioxidant lycopene and are also a great source of Vitamin C, Potassium, folate (Vitamin B9) and Vitamin K.

Ginger does wonders for digestive health and also fights inflammation.


Considering these benefits, just imagine how much benefits we will get when we have all of them in just a single bowl. So please go ahead, make it, relish it and boost your immunity.



Ingredients:


Beetroot 1/2

Carrot 1 medium sized

Tomato 1 big

Ginger 1 inch

Coriander leaves few

Salt to taste

Sugar a pinch

Pepper powder to taste


Method:


🌱 Wash the vegetables thoroughly.

🌱 Peel the carrot and beetroot. Slice them into small pieces.

🌱 Chop tomato and ginger into pieces.

🌱 In a cooker, add a dollop of butter.

🌱 Then add the chopped beetroot, carrot, tomato, coriander leaves and ginger.

🌱 Saute them for a minute and then add water.

🌱 Pressure cook for 4 whistles.

🌱 Once done, strain the water and cool the vegetables completely.

🌱 Then blend the veggies into a fine paste.

🌱 Heat a pan. Add the blended veggies along with the strained water.

🌱 Add salt and sugar. Also add more water if the soup is thick.

🌱 Simmer it for few minutes.

🌱 Switch off the flame.

🌱 Add pepper powder and shredded butter.

🌱 Serve it hot.
