Vegetable Wonton (Dumpling) Soup

Gong Xi Fa Cai ! Happy Chinese New Year !

So today is the Chinese New Year or the Lunar New Year. And this year, it is the year of the Ox. The Chinese New Year is associated with several myths and customs. The festival was traditionally a time to honor deities as well as ancestors. People decorate the houses with red paper-cuts and couplets, which actually denotes good fortune, wealth and longevity. In the northern regions of China, dumplings are featured prominently in meals celebrating the festival. (Source: Wikipedia).

So today's post is a Veg Dumpling Soup (Veg Wonton Soup).

Ingredients:

For the Stuffing:

Carrot 1/2 if large or 1 small

Capsicum 1/2 cup

Cabbage 1 cup

Paneer 1 cup

Garlic Chilli Sauce 1 tsp

Black pepper 1 tsp

Sesame Oil 1 tsp

For the Wrapper:

All purpose Flour (Maida)

Warm Water

Salt to taste

For the Soup:

Water

Spring Onions as per your taste

Garlic 2 pods

Ginger 1 tsp

Carrot 1 small

Cabbage 1/2 cup

Capsicum 1/2 cup

Salt to taste

Method:

Step 1: Stuffing for the Wontons:

  1. Chop Onion, Carrots, Capsicum and Cabbage into small pieces.

  2. Mash the paneer finely.

  3. Mix the chopped veggies (step 1) and mashed paneer (step 2) in a bowl.

  4. Add a tsp of black pepper powder, a tsp off garlic chilli sauce, a tsp of sesame oil to the above and mix well.

Step 2: Prepare the Wontons:

  1. If you have ready- made wrappers, use them. I made my own Wonton wrapper. It is very simple to make. Mix all purpose flour, salt in a warm water and knead it into a soft dough. Roll out a circle and cut into square shape.

  2. Place half a tsp of the filling into the Wrapper and shape them into Wontons.

  3. Keep them aside.

Step 3: Prepare the Soup:

  1. In a pan , add water.

  2. Add ginger, garlic, pepper powder.

  3. Once the water starts boiling, add the chopped spring onions and garlic chilli sauce. Generally, Soy Sauce is added, but I prefer to add Garlic Chilli Sauce.

  4. Add onions, Carrots, Capsicum and Cabbage.

  5. Add salt to taste and cover the pan with a lid.

  6. Once the veggies are wilted, slowly drop the Wontons into the soup.

  7. Once the Wontons start floating on the top, the soup is ready.
