Today's post is a very healthy South Indian Sambar made with mixed vegetables.
Sambar is a very healthy food. The reason is very simple.
๐ It is made with vegetables and veggies are packed with vitamins and antioxidants.
๐ It is made with dal (lentil) which is protein rich.
You can make sambar with any vegetables of your choice. Today I have used a combination of vegetables such as Onion, green & red capsicum and yellow pumpkin. Well, Yellow pumpkin is highly nutritious and rich in Vitamin A. Let's get on to the recipe.
Ingredients:
Mixed Vegetables (Onion, Green Capsicum, Red Capsicum, Yellow Pumpkin) 1 cup
Tur Dal 1/2 cup
Tamarind pulp lemon sized
Sambar Powder 1 tsp
Asafoetida a pinch
Turmeric powder 1 tsp
Mustard Seeds 1 tsp
Fenugreek Seeds 1/2 tsp
Salt to taste
Coriander leaves few
Method:
Pressure Cook tur dal for 4 whistles.
Soak tamarind in hot water for 15 minutes. Extract the tamarind pulp and keep it aside.
Heat oil in a pan. Once hot, add mustard seeds, fenugreek seeds and allow them to splutter.
Add onions, green & red capsicum. Saute until onion turns translucent.
Add yellow pumpkin. Saute for a minute.
Add sambar powder, turmeric powder, asafoetida to the above and mix well.
Add the extracted tamarind pulp. Allow it to boil until the raw smell of the tamarind goes away.
Next add the cooked tur dal. Allow it to boil for 3 to 4 minutes in medium flame.
Switch off the flame.
Garnish with coriander leaves & enjoy hot with piping hot rice.
