
Kuzhambu is a tamarind based dish (with veggies) made in almost every household in South India. This post is about one such Kuzhambu made using Mochai (butter beans).

Let's see how to make this Kuzhambu.
Ingredients:
Mochai 1 cup
Tamarind lemon sized
Asafoetida pinch
Turmeric Powder a pinch
Sambar Powder 1 tsp
Red Chilli powder 1/2 tsp
Grated Ginger 1 tsp
Rice flour 1 tsp
Salt to taste
Sesame Oil 2 or 3 tsp
Mustard Seeds 1 tsp
Fenugreek seeds 1/2 tsp
Red Chilli 1
Curry leaves
Method:
Soak Mochai overnight, the next day drain the water and cook for 4 whistles.
Soak the tamarind in hot water for 15 minutes. Extract the tamarind pulp and keep it aside.
Heat oil in a pan. Once hot, add mustard seeds and allow it to splutter.
Next add the fenugreek seeds, red chilli, curry leaves, asafoetida, turmeric powder, sambar powder, red chilli powder. Saute for a minute.
Add the cooked mochai & saute for a minute.
Add the tamarind extract.
Add salt, grated ginger and allow the mixture to boil on medium flame until the raw smell of tamarind goes away.
If the consistency is thin, mix the rice flour with water and add it to the boiling mixture & allow it to simmer for 4 to 5 minutes.
Switch off the flame.
Garnish with curry leaves.
A yummy, spicy and tangy Mochai Kuzhambu is ready.
