
Today's post is a One pot tiffin sambar that is very easy to make and delicious too. It has moong dal as a main ingredient along with loads of veggies, thus making it a nutritious and wholesome dish. This sambar, as the name suggests pairs well with South Indian tiffins such as Idli / Dosa / Pongal. Interestingly, it tasted awesome with piping hot rice along with a dollop of ghee and paired with pappad 😅.

I learnt this recipe from my foodie blogger friend Kavitha @kavithskitchen. I saw this on her feed and I wanted to try this. Coming on to this post, this has Moong dal as the main ingredient. There are so many health benefits of adding moong dal to our diet. To name a few, they (are):
rich in iron and potassium
improves heart health
controls blood sugar
good for gut health
Here is the recipe.
Ingredients:
Moong Dal 1 cup
Tamarind lemon small
Onion 1
Tomato 1
Vegetables of your choice
Coriander Powder 1.5 tsp
Red Chilli Powder 1 or 2 tsp
Cumin Seeds 1 tsp
Salt to taste
Mustard Seeds 1 tsp
Fenugreek Seeds 1/2 tsp
Asafoetida pinch
Curry leaves
Method:
Soak moong dal in hot water for ten minutes.
Soak tamarind in hot water for 15 minutes. Then extract the pulp & keep it aside.
In a pressure cooker, add the soaked moong dal, extracted tamarind pulp, chopped onions, tomatoes & vegetables of your choice. I used potatoes, white pumpkin, carrot & brinjal.
Crush cumin seeds (in your palm) and add it to the above along with coriander powder & red chilli powder.
Pressure cook for 4 whistles.
Once done, mash the dal. Adjust the consistency by adding water.
Tadka with mustard seeds, methi seeds, red chilli, asafoetida & curry leaves.
Enjoy with idli / dosa / pongal or even hot rice.
