Paneer Khurchan

Paneer Khurchan is one of the easiest semi dry North Indian side dish. The word "Khurchan" originates from Hindi language, it means "scraping". This dish is basically made by cooking paneer with onion, tomato, capsicum and Indian spices. One of the easiest and scrumptious side dish and it goes well with any rice or roti. I paired it with Vegetable Fried Rice.
Ingredients:
Paneer 200 gms
Onion 2
Tomato 2
Capsicum 1 cup (I used green and red varieties)
Ginger Garlic paste 2 tsp
Chilli Powder 1 tsp
Cumin Powder 1 tsp
Coriander Powder 1 tsp
Amchur Powder 1/2 tsp
Garam Masala Powder 1 tsp
Salt to taste
Kasuri Methi Leaves
Method:
Heat oil in a pan. Add green chillies, coriander leaves and saute for few seconds.
Add chopped onions and saute until they turn translucent.
Next add chopped tomatoes. Saute until the tomatoes turn soft.
Add ginger garlic paste. Saute for few seconds.
Add capsicum and saute for a minute.
Next add salt, chilli powder, cumin powder, coriander powder, garam masala powder and amchur powder.
Mix well and add half a cup of water. Cover and cook in medium flame for 5 minutes.
Next add the paneer cubes. Cover and cook for 5 minutes.
Garnish with Kasuri methi leaves.
*** Please ensure that you make this sabzi in a heavy bottomed pan. Otherwise, the paneer and the gravy can be burnt while cooking.
