Today's post is a very healthy Sweet Potato Mixed Vegetable Curry.
The main ingredient in this curry is the Sweet Potato. One of the best benefits of consuming Sweet potatoes is it is a slow-burning carbohydrate. That means, it keeps the blood sugar levels stable. This is very essential for a woman with PCOS. Also, sweet potatoes are fiber-rich. You can help prevent PCOS that is caused by excess insulin by eating more high-fiber foods. Dietary fiber helps to stabilize the insulin levels by slowing down the release of glucose into the bloodstream.
Another key ingredient in this curry is the Coconut milk. Researchers have found that coconut milk contains medium chain triglycerides which stimulates weight loss and lowers cholesterol. Weight loss is also a key factor for woman dealing with PCOS.
Always remember, following your diet meticulously, combined with exercises and Yoga are the key to combat PCOS. Well, diet doesn't mean starving. Diet means including healthy food, that keeps you away from binge-eating and at the same time, giving you all the nourishment your body requires.

Ingredients:
Sweet Potato 4 to 5 medium sized
Onion 1 medium sized
Tomato 1
Capsicum 1 cup (I used Red, green & yellow capsicum)
Carrots 1 medium sized
Beans 3 to 4
Thick Coconut Milk 1 cup
Thin Coconut Milk 1 cup
Turmeric Powder a pinch
Coriander Powder 1 tsp
Salt to taste
Coriander leaves few
Spring Onions few
Cumin Seeds 1 tsp
Green chilli 1
Ginger 1 inch
Garlic 1 or 2 pods
Method:
Heat Oil in a pan. Add cumin seeds. When they crackle, ginger, green chilli, coriander leaves & garlic.
Saute for a minute & add chopped onions. Saute until they become translucent.
Add chopped tomatoes. Saute until the tomatoes turn mushy.
Add capsicum and saute for a minute.
Add salt & turmeric powder. Mix well.
Add carrots and beans. Saute for a minute.
Add chopped sweet potatoes (peel the skin).
Mix well, sprinkle water. Cover and cook until the vegetables get cooked.
Add coriander powder. Saute for couple of minutes.
Add Coconut milk & red chilli powder. Simmer for few minutes until the vegetables get blended well with the coconut milk.
Add spring onions & coriander leaves.
Switch off and serve with hot steamed rice.
