Today's post is Kosambari - a simple salad with the goodness of carrot, cucumber and moong dal. This is a typical South Indian salad and is served as a part of main course meal. It is very easy to make and healthy too.
Ingredients:
1 Grated Carrot
1/2 Cucumber chopped
Moong Dal 1 cup
Green Chilli 1 or 2
Grated ginger i inch
Salt to taste
Mustard Seeds
Oil for tempering
Few curry leaves and coriander leaves
Method:
Soak the moong dal in water for 30 minutes.
After 30 minutes, drain the water from moong dal. Add the grated carrot, cucumber and the soaked moong dal in a bowl.
Add green chilli, salt, hing. ginger and coriander leaves to it and mix it well.
Heat oil in a pan. When oil is hot, add mustard seeds, red chilli and coriander leaves. Allow it to splutter. Add it to the salad.
Squeeze juice from 1 lemon. Mix them well.
