Sambal Ubi Kentang

Are you a potato lover? Are you bored of the usual recipes? Then try this "Sambal Ubi Kentang". Ubi Kentang translates to Potato in Malay language and Sambal is a red chilli paste. So this dish is basically deep fried potatoes in Spicy red chilli paste. Do give this dish a try and let me know if you liked it. This tasted awesome.
Ingredients:
Potatoes 5 to 6 medium size
Coconut Milk 1 cup
Red Chilli 1
Garlic 1 or 2 pods
Salt to taste
Oil for deep frying
Sambal:
Red Chillies 5 to 6
Onion 2 medium size
Garlic 3 to 4 pods
Curry leaves few
Ginger 1 inch
Sugar a pinch
Lemongrass 2
Tamarind extract little
Salt to taste
Method:
Step 1: Prepare the potatoes:
[The potatoes can be baked or air fried too but I chose to deep fry.]
Deep fry the potatoes in hot oil.
Once brown, remove from oil and keep it aside.
Step 2: Prepare the Sambal:
Blend all the ingredients given under "Sambal" into a fine paste adding little water.
Heat oil in a pan. Add the blended paste and saute them until the oil separates.
Switch off the flame and keep it aside.
Step 3: Prepare the Sambal Potatoes:
Heat oil in a pan. Add garlic and saute them for a second.
Add the prepared Sambal and saute them for a minute or two.
Add the coconut milk and mix them well.
Add the deep fried potatoes and mix so that the potatoes blends well with the sauce.
Garnish with coriander leaves and enjoy.
