Shahi Paneer

Today's post is "Shahi Paneer", which literally translates to "Royal Cottage Cheese". It is a very popular gravy in Indian restaurants. It is a very rich gravy made with Paneer in Onion-Tomato-Cashew gravy. Let's get on to the post.
Ingredients:
Paneer 1 cup
Onion 2
Tomato 3
Cashewnut 10
Almonds 7 to 8
Ginger 1 inch
Green Chilli 1
Garlic 1 or 2 pods
Red Chilli powder 1 tsp
Bay Leaf 1
Cumin Seeds 1 tsp
Salt to taste
Garam Masala Powder 1 tsp
Milk 1 cup
Kasuri Methi Leaves
Coriander Leaves
Sugar a pinch
Method:
Shallow fry Paneer cubes in oil until brown. Keep it aside.
Add oil to a pan. Once hot, add chopped onions. Saute for a minute.
Add ginger, garlic, green chilli, cashewnuts & almonds. Saute for 2 minutes.
Add chopped tomatoes & red chilli powder. Saute for 5 minutes.
Switch off the flame. Allow it to cool & grind it into a smooth paste.
Add butter to a pan. Add bay leaf, cumin seeds.
Add the ground paste. Saute until the gravy thickens.
Add salt, garam masala powder & the fried paneer cubes. Saute for a minute.
Add milk. Cover the pan with the lid.
Add Kasuri methi leaves, Coriander leaves & pinch of sugar. Simmer for 2 to 3 minutes.
Switch off the flame.
Enjoy with roti.
