Stuffed Brinjals in tamarind & peanut/sesame seed based gravy


Brinjals !!! That's one veggie that I really like next to Cauliflower. They are so versatile and no matter how you make, it never disappoints you 😃.


Today's post is Stuffed Brinjals in tamarind & peanut/sesame seed based gravy. Here the brinjals are stuffed with onion-tomato-roasted peanuts-sesame seeds based mixture and cooked in tamarind extract. Can be a good accompaniment to piping-hot steamed rice !


Ingredients:

Small Brinjals 7 to 8

Tamarind lemon sized

Onion 1

Tomato 1

Salt to taste

Mustard Seeds 1 tsp

Red Chilli 1

Coriander leaves few

Sesame Oil


To roast and grind:

Peanuts 3 tsp

Coriander Seeds 1 tsp

Sesame Seeds 1 tsp

Grated Coconut 1 tsp

Methi Seeds 1/2 tsp

Cumin Seeds 1 tsp

Red Chillies 3 or 4


Method:

1. Prepare the masala stuffing:

  • Roast the ingredients given under "To roast and grind" in little oil. Transfer to a mixer jar.

  • Saute onions and tomatoes for few minutes until onions turn translucent & tomatoes turn soft.

  • Add the sauted onions and tomatoes to the mixer jar and grind it along with the roasted ingredients (step 2)

2. Stuff the brinjal.

  • Remove the stalk and make an X cut. Stuff the prepared masala stuffing into the brinjal.

  • Keep the remaining stuffing aside.

3. Prepare the stuffed brinjal.

  • Heat oil in a pan. Add mustard seeds & red chilli.

  • When they crackle, add the stuffed brinjal. Cover and cook until the brinjal turns soft.

  • Add the tamarind extract and allow it to boil until the raw smell of the tamarind goes away.

  • Next add the remaining masala powder. Mix well. Simmer for couple of minutes.

  • Switch off the flame.

  • Garnish with coriander leaves.
