Subz Do Pyaza

Today's post is a simple curry made out of mixed vegetables. Here Onions are added twice, one in sauted form and the other in paste form. Hence the name "do pyaza". Goes very well with roti or naan.
Ingredients:
Mixed Vegetables 1 cup
(I used potatoes, baby corn, beans, carrot and Cauliflower)
Onion 1
Capsicum 1 small
Tomato 3
Yogurt / Curd - 1/4 cup
Garam Masala Powder 1 tsp
Turmeric powder a pinch
Salt to taste
To grind into paste:
Onion 2
Garlic pods 1 or 2
Ginger 1 inch
Green Chilli 1
Method:
1. Grind the ingredients given under "To grind" into a thick paste and keep it aside.
2. Puree the tomatoes and keep it aside.
3. Boil the vegetables until soft and keep it aside.
4. Heat oil in a pan. Once hot, add mustard seeds and cumin seeds and allow it to splutter.
5. Add onions and saute until translucent.
6. Add capsicum and saute for couple of minutes.
7. Add the ground onion paste (step 1) and saute for 5 minutes.
8. Next add the tomato puree (step 2). Saute until the oil separates from the gravy.
9. Add the boiled vegetables, salt, chilli powder and garam masala powder.
10. Simmer for few minutes. Let them blend well with the gravy.
11. Add yogurt. Cover the pan and let them simmer for couple of minutes.
12. Switch off the flame and serve hot with roti.
