Vegetarian Pad Thai

Today's post is the most popular "Pad Thai" from Thai cuisine.


Pad Thai is a stir fry noodles dish made from rice noodles and lots of vegetables. It is the most common street food in Thailand and served in many of the Thai restaurants. The ingredients are sauted in a wok and tossed in a Thai sauce. It has a tangy flavour (due to the addition of tamarind) with hint of sweetness too (due to brown sugar).


For the rice noodles, I used the store-bought "Rice Stick Pad Thai Noodles" from Real Thai. Those rice noodles can be made at home too. Am experimenting on this and would share the recipe if it turns out well 😅.


Let's get on to the post.


Ingredients:


Thai Rice Noodles

Bok Choy 1

Onion 1

Capsicum 1

Carrot 1

Peas a handful

Garlic 3 to 4 pods

Roasted peanuts a handful

Tamarind small ball sized

Brown Sugar 1 or 2 tsp

Garlic Chilli Sauce 2 tsp

Coriander Leaves


Method:


1. Prepare the sauce:

  1. Soak tamarind in hot water for 15 minutes. Extract the pulp.

  2. Add garlic chilli sauce and brown sugar.

  3. Mix them well and keep it aside.


2. Prepare the vegetables:

  1. Chop the onions, capsicum into thin vertical slits.

  2. Chop garlic into small pieces.

  3. Chop bok choy horizontally.


3. Prepare the noodles:

  1. Soak the rice noodles in hot water for 15 minutes.

  2. Drain the hot water and immerse them in cold water. This is to make sure that the noodles dont get cooked.


4. Prepare the Pad Thai:

  1. Heat oil in a pan.

  2. Add garlic and onion. Saute for a minute.

  3. Add Capsicum, bok choy, carrots and peas.

  4. Saute them for couple of minutes until the vegetables are wilted yet crunchy.

  5. Add the rice noodles.

  6. Add the sauce, peanuts and stir them slowly.

  7. Let them cook until the noodles blends well with the sauce and absorbs it.


5. Relish:

  1. Once done, switch off the flame.

  2. Garnish with coriander leaves and top with roasted peanuts.

  3. Serve hot.
