Thai cuisine is one of the healthiest foods that we can eat. The ingredients that are used have lot of health benefits and immune boosting power too. For example, the turmeric that is used in this curry has lot of anti-oxidants and healing powers. The lemongrass that is used has a ability to fight flu and cold symptoms.
This yellow curry is similar to Thai Green and Red curry. But it is very mild and somewhat sweet taste when compared to them. Turmeric is the ingredient that gives the bright yellow colour to this curry.
Ingredients:
Sweet Corn 1 cup
Carrot 1
Yellow pumpkin 1 cup
Green Capsicum 1 cup
Coconut milk 400 ml
Onion 1
Mango cut into cubes 1/2 cup
Apple cut into cubes 1/2 cup
Water 1 cup
Basil leaves 3
Salt to taste
Yellow Curry Paste:

Green chillies 1
Pepper 1 tsp
Lemongrass 3 Stalks
Coriander leaves 1 cup
Basil leaves 5
Turmeric powder 1 tsp
Coriander Seeds 1 tsp
Cumin Seeds 1 tsp
Ginger a big piece (2 inch)
Garlic pods 2
Spring Onion Greens 2
Onion 1
Salt to taste
Method:
1. Prepare the yellow curry paste.
a. Dry roast coriander seeds and cumin seeds.
b. In a blender, blend all the ingredients given under "Yellow Curry paste" into a thick paste adding very little water. The paste should be thick and not watery.
2. Prepare the veggies.
a) Steam all the vegetables except onion and capsicum.
b) Heat oil in a pan. Add onion. Saute it for a minute. Next, add capsicum. Saute it for a minute. Keep it aside.
3. Prepare the yellow curry.
a) Heat oil in a pan.
b) Add the yellow curry paste to it. Saute it for a couple of minutes.
c) Next add the coconut milk and one cup water. Mix them well.
d) Bring the above curry to a boil. Once it starts boiling, add the stir fried vegetables (onion and capsicum) along with the steamed vegetables. Add salt to it.
e) Then add the mango and apple cubes to it.
f) Let it boil for 10 minutes. You will see the curry start thickening.
g) Switch off the flame.
h) Serve it hot with steamed rice.
