Today's post is "Aloo Ke Gutke". The ingredient that is chosen for this special post is the humble potatoes. Well who wouldn't love potatoes, isn't it? So today I present you a regional dish from the States of Uttarakhand, India. This is Vegan and gluten free.
Some interesting facts about this dish. This is the most common snack and street food served at most of the roadside eateries in the Kumaon hills of Uttarakhand. "Aloo" means Potatoes and "Gutke" in the Kumaoni language means pieces. So this is basically a simple stir-fry potato pieces /cubes in spices. The reason why this dish is popular in Kumaon hills is due to the abundance of potatoes and they can be made with minimum resources.
Let's see how to make this
Ingredients:
Potatoes 4 to 5
Cumin Seeds 1 tsp
Red Chilli 1
Asafoetida a pinch
Salt to taste
Red Chilli Powder 1 tsp
Coriander Powder 1 tsp
Turmeric Powder 1/2 tsp
Mustard Oil (I used Sesame Oil)
Curry / Coriander leaves for garnishing
Method:
Pressure cook potatoes, peel the skin, chop them into cubes and keep it aside.
To a bowl, add red chilli powder, coriander powder, turmeric powder. Add 2 tsps of water to it and make a paste.
Heat oil in a pan. Add mustard seeds, cumin seeds, red chilli. Allow them to splutter.
Next add the paste (step 2). Saute for 10 secomds.
Add the boiled (chopped) potatoes (step 1) & salt. Let the spice paste coat the potato well. Saute for 5 minutes. Once done, switch off the flame.
Garnish with Curry / Coriander leaves.
