Bombay Potatoes

"Bombay Potatoes" is an Indian dish where the potatoes are cooked in Onion tomato gravy-base and seasoned with rich Indian spices such as Cumin, turmeric, fennel and garam masala. This is Vegan, gluten-free, easy to make, spicy and more importantly delicious đź’Ş.
Ingredients:
Baby Potatoes 10 to 12
Onion 2 medium size
Tomato 3 small
Red capsicum 1 small
Green chillies 2
Ginger garlic paste 1 tsp
Coriander powder 2 tsp
Red chilli powder 1 tsp
Cumin Powder 1 tsp
Fennel Powder 1 tsp
Hing
Turmeric Powder a pinch
Garam Masala Powder 1 tsp
Coriander leaves
Method:
Pressure cook baby potatoes for 4 whistles. Once done, peel the skin and keep it aside.
Add tomatoes and red capsicum to the mixer and grind into a smooth puree. Keep it aside.
Heat oil in a pan. Add mustard seeds, cumin seeds. When they splutter, add hing, turmeric powder, coriander leaves and green chillies. Saute for few seconds.
Add Onions and saute until translucent.
Add ginger garlic paste. Saute and add the tomato capsicum puree (step 2).
Add salt, red chilli powder, coriander powder, cumin powder, fennel powder. Mix thoroughly and allow the gravy to simmer until the raw smell of the tomato goes away.
Next add the baby potatoes (step 1). Mix well so that the gravy quotes the potatoes thoroughly.
Allow it to simmer for few minutes and switch off the flame.
Garnish with coriander leaves and serve hot.
