Avocado Mint Gazpacho

Today's post is on avocado mint gazpacho.
Well, Gazpacho is basically a cold soup made up of tomatoes and raw vegetables. It originates from Spain and usually served in hot Summers. It is a healthy soup rich in anti-oxidants and minerals.
The main ingredients that are used are tomatoes, onions, peppers, cucumbers, bread and olive oil.
Actually I didn't add cucumber and bread (as I didn't have them). Yet,it tasted awesome. If you have them, please dont forget to add them in the blender along with the veggies.
My version is thick, so I had it in a bowl. However, the traditional gazpacho will be little thin and can be sipped from a glass. Let's get on to the post !
Ingredients:
Avocado 1 ripe
Mint leaves a handful
Tomato 1
Onion 1
Pepper powder 1 tsp
Red Chilli Powder 1/2 tsp
Method:
🥑 Scoop out the pulp of the avocado. Keep a little bit of them aside and transfer the rest to the blender.
🥑 Add mint leaves, tomato, onion, chilli powder, salt and pepper powder. Puree into a thick paste.
🥑 Transfer the puree into a bowl. Add water and adjust the consistency.
🥑 Add the chopped avocado pieces. Garnish with mint leaves and cherry tomatoes.
🥑 Refrigerate and have it cold.
