Espinacas con Garbanzos (Spanish Spinach and Chickpeas)

Hey friends, so after having tried the middle east and Thai cuisine, I wanted to explore some Spanish Vegetarian Cuisine. That's when I came across this delicacy. Chickpeas and Spinach seemed to be a weird combination though, but just gave a try. And it didn't disappoint me. The dish was tasting awesome and healthy too. Protein packed with nutrients and made in just under 30 minutes was something interesting. And made with my home grown spinach was an added bonus.


Ingredients:

Chickpeas 1 cup

Onion 1 big

Tomatoes 2 or 3

Garlic 2 to 3 pods

Spinach 1 cup

Cumin powder 1/2 tsp

Pepper powder 1 tsp

Chilli powder 1/2 tsp

Sugar a pinch

Salt to taste


Method:


1. Wash the chickpeas thoroughly.

2. Soak them in water for 12 to 24 hrs.

3. Pressure cook the chickpeas for 4 whistles.

4. Blend the tomatoes in a mixer and extract the puree.

5. In a pan, heat oil. When hot, add sliced Onions and garlic. Saute them well.

6. After 4 to 5 minutes, add cumin powder and chilli powder.

7. Mix them nicely and add the tomato puree.

8. Add salt, black pepper and a pinch of sugar. Mix them well.

9. Next add the chopped spinach .

10. Close the pan and allow it to cook in low flame for a few minutes.

11. Once the spinach is cooked well, add the chickpeas. Cook for 5 minutes.


A healthy chickpeas spinach is ready.
