Carrot Chutney

Looking for a chutney/dip rather than the usual coconut chutney, onion/tomato chutney? Then try this Carrot chutney. This is a spicy yet sweet chutney. It is both healthy and tasty. Carrots are good for our eyes, it is packed with lot of nutrients. This chutney goes well with idli and dosa.
Ingredients:
Grated Carrot 3 or 4 medium size
Garlic 2 to 3 pods
Onion Shallots or 1 big onion
Green Chilli 1 or 2
Ginger 1 tsp
Tamarind small piece
Salt to taste
To temper:
Oil
Mustard Seeds
Curry leaves
Method:
1. Wash the carrot well, peel them and chop them into small pieces.
2. Heat oil in a pan.
3. Add green chilli, garlic and ginger to the pan and saute them well.
4. Next add onion shallots/sliced onions and fry them well.
5. Next add the chopped carrots. Add salt to it and cover it with a lid. Cook in medium flame for 5 minutes.
6. Next add tamarind and coriander leaves and saute until the carrots are cooked well.
6. Switch off the flame.
7. Let the mixture cool.
8. Once it is cool, transfer the mixture to a blender. Add a pinch of asafoetida to it.
9. Blend them into a coarse paste.
10. Transfer it to a bowl.
11. In a pan, heat oil. Add mustard seeds, curry leaves and once it splutters, add it to the chutney.
A yummy healthy carrot chutney is ready.
