Cauliflower Peas Pulao

Today’s post is a very simple Cauliflower & Peas Pulao. This is a simple one Pot meal. The cauliflower and peas are cooked in a onion tomato mixture with aromatic Indian spices and mixed with basmati rice and cooked to perfection 🤩


** Recipe **


Ingredients:


Basmati rice 1.5 cup

Cauliflower 1 medium size

Peas 1 cup

Onion 1 big

Tomato 3 medium size

Ginger 1 inch

Garlic 2 pods

Green Chilli 1

Star Anise 1

Cardamom Pods 2

Cloves 2

Bay Leaf 1

Turmeric powder a pinch

Salt to taste

Ghee

Oil


Method:

  1. Grind ginger, garlic, green chilli and tomato into a fine paste & keep it aside.

  2. Immerse the cauliflower florets in hot water (with a pinch of turmeric powder & salt added)

  3. Soak basmati rice in water for 15 minutes, then drain the water & keep it aside.

  4. In a pan, add ghee and oil.

  5. Add bay leaf, star anise, cardamom pod & cloves. Saute for a minute.

  6. Add chopped onions. Saute for a minute.

  7. Add the tomato puree (step 1). Mix well. let it cook for a minute.

  8. Add green peas. Mix well.

  9. Add cauliflower florets. mix them well.

  10. Add salt, garam masala powder, coriander leaves.

  11. Add rice. mix well.

  12. Add water (for every 1 cup rice, add 1.5 cup water). Cover the pan with a lid and let it cook in medium flame for 10 minutes or until the water gets absorbed.


A wholesome one pot meal is ready. Can be paired with onion raita.
