Curry Leaf Kuzhambu

Today's post is a simple South Indian kuzhambu made out of curry leaves. These leaves have been quite extensively used in Indian Cooking. But do you know that these leaves are used for millions of years for their medicinal properties?

Lets see the recipe for this simple flavorsome kuzhambu.
Ingredients:
Curry leaves 1 or 2 cups
Tamarind lemon sized
Bengal gram dal 1 tbsp
Pepper 1 tsp
Coriander Seeds 1 tsp
Red Chilli 3 or 4 depending on how spicy you want it to be
Mustard Seeds 1 tsp
Turmeric powder 1/2 tsp
Asafoetida a pinch
Salt
Oil
Method:
🌿 Soak tamarind in hot water for 15 minutes. Extract the tamarind pulp and keep it aside.
🌿 Heat oil in a pan. Add bengal gram dal, pepper, coriander seeds and red chilli. Fry it till the dal turns brown. Keep it aside.
🌿 Next add the curry leaves to the same pan. Saute it for a minute.
🌿 Switch off the flame. Grind the sauted curry leaves along with the sauted ingredients from step 2, adding little water, into a thick fine paste.
🌿 Heat oil in a pan. Once hot add mustard seeds and allow it to splutter.
🌿 Add the tamarind pulp, salt, turmeric powder, asafoetida. Allow it to boil until the raw smell of the tamarind goes away.
🌿 Add the ground curry leaf paste to the above boiling mixture and allow it to boil in medium flame for 5 minutes.
🌿 Switch off the flame.
