Curry leaf powder

The one leaf that we often think its just for flavour and throw it from our plate is the curry leaf (Karuvepillai). Do you know that curry leaves have antioxidant, antimicrobial and anti-inflammatory properties? These leaves not only add flavour to our food, but it comes with lot of nutritional benefits. They are rich in iron and calcium. This aromatic ingredient is one of the essential ingredient in every Indian households. We have a curry leaf plant at home. Its very easy to grow it too.


The curry leaf powder can be prepared and stored in an airtight container for a week. It can be had with hot rice mixed with ghee/oil . Most importantly, it aids in digestion too. So why not prepare one and keep it handy?


Ingredients


Curry leaves 1 cup

Chana dal 1/2 cup

Red Chillies 10

Hing a pinch

Tamarind little (based on how tangy you want it)

Salt to taste


Method:


1. Heat little oil in a pan.

2. Add the chana dal, red chillies and fry them until golden brown. Remove from pan and keep it aside.

3. Next add tamarind to the pan and saute it for a minute.

4. Switch off the flame and add curry leaves to the above pan.

5. Once they cool, transfer the roasted ingredients in step 2 along with the tamarind, curry leaves into a jar. Add salt and hing to it. 6. Grind them into a coarse powder.
