Patatas a la Porbe with Indian twist

"Patatas a lo porbe" literally means "poor man's potatoes" in Spanish. This is a Spanish recipe and is vegan. A very simple dish made out of fried potatoes, capsicum and Onion. However, being an Indian, I cudn't resist adding turmeric powder and cumin seeds, so gave a Indian twist to this 😂. Usually, the potatoes would be slowly fried, but being a little health-conscious, decided to boil it and use. You can add 1 or 2 garlic pods, but just skipped it as my daughter is not that fond of garlic.
Ingredients:
Potatoes 6 medium sized
Onion 1 big
Capsicum 1
Mustard Seeds 1 tsp
Cumin Seeds 1 tsp
Oil
Salt to taste
Coriander leaves few
Method:
🥔 Pressure cook the potatoes for 4 whistles.
🥔 Peel the skin and chop them into pieces.
🥔 Heat oil in a pan.
🥔 Once hot, add mustard seeds and cumin seeds.
🥔 Once they splutter, add the chopped onions. Saute them until they are translucent.
🥔 Next add the chopped capsicum. Saute them for a minute.
🥔 Add turmeric powder, chilli powder and salt.
🥔 Mix well and then add the chopped potatoes.
🥔 Saute them for 5 to 10 minutes until the potato blends well with the onion & capsicum spice mix.
🥔 Switch off the flame.
🥔 Garnish with coriander leaves.
