Pudina Rice (Mint rice)

Mint leaves are very easy to grow at our kitchen backyard. Right from mojitos to our very own pudina rice, mint leaves are used extensively in cooking.

Ingredients


Basmati Rice 1 cup

Mint leaves 1 bunch

Turmeric powder a pinch

Asafoetida a pinch

Tamarind little

Green Chilli 1

Onion 1

Paneer cubes 1 cup

Mustard Seeds 1 tsp

Cumin Seeds 1 tsp

Salt to taste

Oil


Method:


1. Cook the rice separately.

2. In a mixer, blend mint leaves, green chilli, tamarind into a paste adding little water.

3. Shallow fry paneer cubes in oil and keep it aside.

4. Heat oil in a pan.

5. Once hot, add mustard seeds and cumin seeds.

6. When they splutter, add onions. Saute them until translucent.

7. Add the ground mint paste. Saute them for couple of minutes.

8. Add the paneer cubes, turmeric powder, hing and salt . Mix them well.

9. Add the cooked rice to it.

10. Mix them thoroughly and switch off the flame.
