Today's post is a yummy tangy Mango Rice. I learnt this recipe from my dear uncle.
Just a small story. We lived in a joint family when I was a kid. My uncle is a super cool person. He is an entrepreneur by profession and has passion for cooking. We kids would be waiting for Sunday because there will be a special meal prepared by him in the menu 😅. Recently when my uncle made this, my lil one enjoyed it and gave a special name to this as "Maanga Puliyodharai" 😂. This rice basically tastes like Puliyodharai, but with a tangy flavour.
Ingredients:
Raw Mango 1 medium size
Basmati Rice 1/2 cup
Green Chilli 1 or 2
Red Chilli 1
Coriander Leaves few
Curry leaves few
Ginger 1 inch
Turmeric Powder a pinch
Red Chilli powder 1/2 tsp
Coriander Powder 1 or 2 tsp
Hing
Salt to taste
Roasted peanuts few
Sesame Oil
Mustard Seeds 1 tsp
Cumin Seeds 1/2 tsp
Method:
Soak basmati rice in water for 15 minutes.
Heat oil in a pan. Add mustard seeds & cumin seeds.
Once they splutter add red chilli, green chilli, coriander leaves and ginger. Saute them for few seconds.
Next add the chopped mangoes, turmeric powder, hing, coriander powder, salt & red chilli powder.
Once the mangoes turn soft, add a glass of water. When the water comes to a boil, add the soaked basmati rice.
Add curry leaves and cover the pan with a lid. Cook the rice in medium flame until ala dente.
Next add groundnuts. Mix and serve.
This rice does not need any side dish. It is a satisfying meal on its own.
