Stuffed Capsicum

Today's post is on Stuffed Capsicum. A very basic aloo stuffing with Indian spices. I have cooked this in a pan. Alternatively you can bake it too.

Ingredients:


Potato 2

Onion 1

Tomato 1

Carrot 1

Ginger 1 inch

Green Chilli 1

Garam Masala Powder 1 tsp

Turmeric Powder a pinch

Coriander Powder 1/2 tsp

Chilli Powder a pinch

Amchur Powder 1/2 tsp

Salt to taste


Method:


🌿 Peel the skin of potatoes. Chop them into small pieces. And cook them until soft.

🌿 Peel the carrot skin and grate them.

🌿 Heat oil in a pan. Add mustard seeds and cumin seeds. Allow it to splutter.

🌿 Once they splutter, add ginger, green chilli. Saute them for a minute.

🌿 Add the chopped onions. Saute until translucent.

🌿 Add chopped tomato. Saute until they are soft.

🌿 Add turmeric powder, coriander powder, garam masala powder, amchur powder, chilli powder and salt.

🌿 Add the grated carrots and the boiled potato.

🌿 Cover and cook for 5 minutes in medium flame. Switch off the flame. The stuffing is ready.

🌿 Slit the capsicum into halves.

🌿 Stuff the capsicum with the prepared aloo mixture.

🌿 Heat Oil in a pan. Place the stuffed capsicum on the pan.

🌿 Drizzle some salt, cover the pan with the lid.

🌿 Let it cook in low flame for 30 minutes.

🌿 Switch off and serve it hot.
