This is a one pot meal which is more appetizing and also made in pressure cooker. Very simple to make. You can add any vegetables of your choice, but I just added carrot, potato and beans. Adding yogurt(curd) is what gives that briyani touch. So do not skip the yogurt part.
Onion raita (onions & green chilli in yogurt dip) is an excellent combination for this.
Ingredients:
Basmati Rice 1 cup
Vegetables (I used potato, carrot, french beans)
Star Anise 1
Curd / Yogurt 2 tbsp
Red Chilli powder 1/2 tsp
Ghee
Water 1 1/2 cup
Garam Masala Powder 1 tsp
Salt to taste
To grind:
Onion 1
Ginger 1 inch
Garlic pods 1 or 2
Green Chilli 1
Coriander leaves a few
Method:
Soak the basmati rice in water for 30 minutes.
Grind the ingredients given under "To grind" into a smooth paste without adding water.
In a pressure cooker, add ghee.
Add Star Anise and fry it well in ghee.
Add the ground paste and saute it in medium flame until the ghee separtes from the paste.
Add the vegetables and saute it for a minute.
Next add garam masala powder and chilli powder and saute it for a minute.
Add curd and mix well.
Next add the rice and saute it well so that it blends well with the other ingredients.
Add water and salt.
Cover the cooker with the lid. Do not put the weight now.
Keep the flame in high.
Once lot of steam starts coming, put on the weight and immediately turn the flame into low.
Switch off the flame after sharp 10 minutes.
