Veg Fried Rice

What would you name a dish that is super healthy and can be made quickly and packed for lunch and which the kids would relish a lot? Yes, it's the Veg Fried Rice. Loaded with lots of fresh vegetables, this is a divine food, I would say. And using fresh spring onions that I grew in my very own garden makes it even more awesome.
Veg Fried Rice and Dal Fry, I know it's not a great combination, but that's how my kids would prefer it. Today I would post on Veg Fried Rice.
Ingredients:
Basmati Rice 1 cup
Cardamom 1
Green Chilli 1
Ginger 1 tbsp
Garlic 1 or 2 pods
Onion 1
Capsicum 1
Carrot 1
Beans
Cauliflower Florets
Broccoli Florets
Paneer
Garam Masala Powder(optional)
Spring Onions
Salt to taste
Ghee
Method:

Preparing the rice:
1. Soak the rice for 15 minutes.
2. Drain the water.
3. In a pressure cooker, add a tbsp of ghee.
4. To it, add cardamom. Fry it for 20 seconds and then add the drained rice to the cooker and fry it for a minute or two. Sauting the rice gives a good flavour to the dish.
5. Cook it for 4 whistles.
Once the rice is cooked, cool it.
Preparing the Veggies:
1. Add water to a vessel and add salt to it.
2. Add Cauliflower and broccoli florets to the above water. Boil until its cooked.
3. Shallow fry the paneer cubes and keep them aside.
4. In a pan, add a tbsp of ghee.
5. To it, add garlic and ginger and saute them well.
6. Then add green chilli and fry it well.
7. Next add Onion and saute them until it becomes translucent.
8. Then add capsicum and fry them.
9. Then add the vegetables (Carrot, beans). Cover the pan and cook for couple of minutes.
10. Next add the boiled florets (cauliflower and brocolli) and the fried panner cubes.
11. Saute them well for a minute.
12. Next add garam masala powder to it and give a quick stir.
13. Next add the cooked rice to it.
14. Blend them well and switch off the flame.
15. Garnish with spring onions and add ground pepper on top.
A yummy health Vegetable Fried rice is ready.
Note:
1. If you like soy sauce, you can add them to give a nice flavour. I generally omit it.
2. You can add any vegetables of your choice.
