Vegetable Briyani

Today's post is Vegetable Briyani. Basmati rice cooked in layers of sauted vegetables with lots of aromatic Indian Spices. How drooling it is 😋.
Ingredients:
Basmati Rice 1 cup
Onion 2
Tomato 2
Vegetables [I used potatoes, beans, carrots, peas, cauliflower florets]
Garlic 2 pods
Ginger 1 inch
Star Anise 1
Cloves 3
Cardamom Pod 2
Turmeric Powder 1 tsp
Coriander Powder 1/2 tsp
Pepper Powder 1/2 tsp
Garam Masala Powder 2 tsp
Curd 2 tsp
Salt to taste
Method:
Step 1: Prepare the rice:
Soak the basmati rice for 15 minutes.
In a vessel, add ghee. Then add Star anise, cloves and cardamom. Saute for a minute.
Add water and salt to it. Once the water starts boiling, add turmeric powder and the soaked basmati rice.
Close the vessel with a lid and allow it to cook for 5 to 10 minutes in medium flame.
Once done, switch off the flame.
Step 2: Prepare the Veggies:
Grind tomatoes, garlic, ginger and green chill into a smooth paste.
Add oil to a pan. Once hot, add onions and saute until translucent.
Next add the tomato paste. Saute for 5 minutes.
Add carrots, peas, cauliflower florets, beans, potatoes.
Add salt. Cover the pan with a lid. Let it cook in medium flame for 5 to 10 minutes.
Once the veggies are cooked, add turmeric powder, coriander powder, garam masala powder and curd.
Let the spice powders blend well with the veggies.
Once done, switch off the flame.
Step 3: Prepare the briyani:
Take a cooker or a vessel. Now we will add alternating layers of rice and veggies.
First add a scoop off rice. Next add the sauted veggies. Again add rice. Keep alternating.
Once the veggies and the rice are added, cover the vessel with a lid and allow it to cook for 5 minutes in medium flame. This will allow the veggies and rice to blend well and you will get a nice aroma 😇
