Vegetable Pulao

Today's post is Vegetable Pulao. This is a one pot meal which is more appetizing and also made in pressure cooker. It is a spicy dish made with basmati rice, vegetables and spices. It is very simple to make. You can add any vegetables of your choice, but I just added carrots, potatoes, beans, capsicum and peas.


Onion raita (onions & green chilli in yogurt dip) is an excellent combination for this.


**** Recipe ****


Ingredients:


Basmati Rice 1 cup

Vegetables (I used Potato, Carrot, Capsicum, French beans, Green Peas)

Onion 1

Star Anise 1

Cloves 2

Cardamom Pod 1

Bay Leaf 1

Ghee

Water 1 1/2 cup

Garam Masala Powder 1 tsp

Salt to taste


To grind:


Onion 1

Ginger 1 inch

Garlic pods 1 or 2

Green Chilli 1

Coriander leaves a few


Method:


  1. Soak the basmati rice in water for 15 minutes.

  2. Grind the ingredients given under "To grind" into a smooth paste without adding water.

  3. In a pressure cooker, add ghee.

  4. Add Star Anise, Cardamom, cloves and bay leaf and fry it well in ghee.

  5. Add the ground paste and saute it in medium flame until the ghee separates from the paste.

  6. Add the vegetables and saute it for a minute.

  7. Next add garam masala powder and saute it for a minute.

  8. Next add the rice and saute it well so that it blends well with the other ingredients.

  9. Add water and salt.

  10. Cover the cooker with the lid. Do not put the weight now.

  11. Keep the flame in high.

  12. Once lot of steam starts coming, put on the weight and immediately turn the flame into low.

  13. Switch off the flame after 10 minutes.

  14. Heat Oil in a pan and add chopped onions. Once the onions start caramelizing, switch off the flame. Add it onto the pulao.

  15. Enjoy it with Onion Raita.
