Today's post is an eggless Apple Kiwi Pie with a blueberry twist.
Apples contain antioxidants, vitamins and dietary fiber. They help to reduce the risk of cancer, obesity, heart disease and diabetes.
Kiwifruits are high in Vitamin C and dietary fiber. It supports heart health, digestive health and immunity.
Blueberries are high in Vitamin C, improves heart health and blood circulation. They are high in fiber, anthocyanins and Vitamin K which helps to reduce skin inflammation.
Ingredients:
For the stuffing:
Apple 2 medium size
Kiwi Fruit 2
Sugar 4 tbsp
Cinnamon 1 stick
Butter 2 tsp
Tapioca flour 1 tsp
Dried Blueberry 2 tsp
For the dough:
All Purpose Flour 1.5 cup
Butter 2 tbsp
Baking powder a pinch
Water
Salt a pinch
Sugar a pinch
Method:
Step 1: Prepare the stuffing:
🍎 Peel the skin of the apple and chop into small pieces.
🥝 Peel the skin of the Kiwifruit and chop into small pieces.
🍎 Heat butter in a pan. Once the butter starts melting, add a cinnamon stick.
🍎 Add the chopped apple and saute them for a minute.
🥝 Add the chopped Kiwi and saute them for a minute.
🍎 Next add the sugar. The apple and Kiwi will start releasing its juice and the sugar will start caramelizing.
🍎 Add little tapioca flour to adjust the consistency.
🍎 Squeeze juice of half the lemon.
🍎 Switch off the flame.
Step 2: Prepare the dough and bake:
👉 Add all purpose flour and butter to a bowl. Add a pinch of salt, sugar and baking powder to it.
👉 Prepare a soft dough by adding water little by little.
👉 Divide the dough into 2 balls.
👉 Refrigerate the dough for 30 minutes.
👉 Next roll the first ball into a thick circle using a rolling pin.
👉 Prick it with a fork. Bake it for 5 minutes at 180 degree centigrade.
👉 Once done, cool the base. Next place the stuffing over it.
👉 Next roll the other ball into a circle and cut them into thin strips. Make a lattice pie crust.
👉 Bake for 25 to 30 minutes at 180 degree centigrade.
