Eggless Fruit Cake

Happy New Year friends 🎉🎉. Here's hoping to less hate and more Cake in 2022 😊.



I prepared an Eggless Fruit Cake for my family which is

✅ Alcohol free

✅ Eggless

✅ No Oven

✅ Made in pressure cooker.



The Cake was fluffy, super moist & spongy.





Ingredients:


All Purpose Flour 1.5 cup

Whole Wheat Flour 1 cup

Sugar 1.5 cup

Milk 1 cup

Oil 1/2 cup

Nuts & Dry fruits of your choice (I used Cashewnuts, dates, walnuts, figs, cranberries, raisins and tooty fruity)

Baking Powder 1 tsp

Baking Soda 1/2 tsp

Cinnamon Powder 1/4 tsp

Cocoa Powder 1 tsp

Cardamom 1 pod (powdered)

Ghee 3 tsp

Vanilla Essence 1 tsp

Sweet Lime Juice 1 cup


Method:


Step 1: Prepare the nuts and dry fruits:

  • Chop all the nuts into very small pieces.

  • Soak them in a cup of Sweet Lime juice.

  • Keep it refrigerated for 2 days.

Step 2: Prepare the batter:

  • Add all the dry ingredients namely sieved flour, cinnamon powder, cardamom powder, Cocoa powder, crushed cardamom pod, baking powder and baking soda to a bowl. Mix it well.

  • To it, add the soaked dry fruits (along with the Sweet Lime juice). Mix well.

  • Next add vanilla essence, ghee and sugar.

  • Whisk them thoroughly for a couple of minutes.

  • The cake batter is now ready.

Step 3: Prepare the Cake Mould:

  • Dust the cake mould (or any vessel that you would like to use for baking) with little flour and ghee.

  • Transfer the cake batter to the cake mould or any vessel of your choice.

Step 4: Bake the Cake:

  • Place the empty pressure cooker on the stove.

  • Place a grill inside the cooker. If you don't have a grill, you can even use the carrot grater that you have (the taller one, not the flat one).

  • Close the lid of the pressure cooker (no need to remove the gasket). Don’t put the whistle.

  • Heat it in medium flame for 5 to 6 minutes. This is equivalent to preheating the oven.

  • Place the mould on top of the grill. Close the cooker and heat in medium flame for 1.5 hours. This cake usually takes a little longer to cook than the usual ones !

  • Open the lid and insert a toothpick and check if the cake has baked completely. No piece of cake should be stuck to the toothpick. That's when the cake is baked completely.

  • Switch off the cooker

  • Cool the cake and then unmould them into a plate.

  • Cut & Enjoy !
