Cheesy Paneer stuffed Bread Sandwich

My kids love bread sandwich (Of course, they prefer anything other than dosa). I wanted to try making it in a different way, other than the usual way of loading the bread with veggies and cheese and sandwiching it. Both my kids like paneer. Since I had all the time due to this lockdown, I decided to try it in a little different way by marinating the paneer cubes, shallow frying it, adding it to other veggies and prepare. This way of making is little time consuming, but the end result is worth our efforts and most importantly kids were happy.
Let's see how I did it.
Ingredients:
Bread Slices
Butter
Paneer
Curd (yogurt) for marinating paneer cubes
Turmeric powder
Sweet Corn
Mustard Seeds
Green Chilli
Grated ginger
Onion
Carrots
Capsicum
Tomato Sauce
Cheese slices
Garam Masala Powder
Salt to taste

Method:
Step 1: Marinate the paneer cubes:
In a bowl, add the paneer cubes.
To it, add salt, turmeric powder, garam masala powder and curd. Mix them nicely.
Refrigerate it for 15 to 30 minutes. Then shallow fry the paneer cubes in oil.
Switch off the flame and keep it aside.
Step 2: Steam the sweet corn.
Step 3: Get the stuffing ready:

In a pan, add mustard seeds. Once it splutters, add green chilli and grated ginger.
Next add onion, capsicum.
Fry them until onion becomes translucent.
Then add the grated carrots, boiled sweet corn and the fried paneer cubes.
Saute it for couple of minutes and switch it off.
The bread stuffing is ready.
Step 4: Prepare the Sandwich.
In the Sandwich maker, put a dollop of butter and place the bread over it.
Apply tomato sauce over the bread.
Place the Cheese over it.
On top of it, place the paneer stuffing.
Place a bread over it and prepare the sandwich.
The delicious cheesy sandwich is ready.
Note:
If you dont have the sandwich maker, you can make it on the tava.
You can add any vegetables of your choice.
