Chickpea Salad

Imagine a salad that is protein packed with the added goodness of lime and avocado. I know, it's tempting for sure. When you are a Vegetarian and you look for protein rich food, Chickpeas is an excellent option. Chickpeas is also called as "Garbanzo beans". They have a butter, nutty flavour and a creamy texture. It offers a lot of health benefits. To name a few:
Aids in digestion.
Controls blood sugar
Boosts bone health
Chickpea Salad is a complete meal by itself. It is high in protein, low in fat and most importantly heavenly to the taste buds!
Ingredients:
Onion 1
Tomato 1
Chickpeas a cup
Carrot 1
Avocado 1
Coriander Leaves few
Pepper powder 1 tsp
Cumin Powder 1 tsp
Juice from One lemon
Salt to taste
Method:
Soak the Chickpeas for 12 to 24 hours.
Pressure cook Chickpeas for 4 whistles.
Cut all the Vegetables into bite size pieces.
When you cut avocado, squeeze lime over it. It will not only stop the avocado from browning, but also adds flavour to the salad.
Take half of the avocado, blend it along with little onion and salt.
Mix the Chickpeas, Vegetables and the blended avocado mixture in a bowl.
Sprinkle pepper powder, cumin powder and salt.
Squeeze lime and serve.
