Lentil Chickpea Salad with loaded Veggies


Today's post is Lentil Chickpea salad with loaded veggies.


Lentils are excellent source of B vitamins, iron, magnesium, potassium and zinc. Most importantly the green lentils reduce the bad cholesterol and also regulates blood pressure. They are full of carbohydrates that is good for digestion.


Chickpeas are packed with nutrients and is a rich source of plant based proteins. They support heart health and reduces the LDL cholesterol.


So this salad is a protein rich salad and lots of veggies in this salad makes it even more a healthier bowl.


Ingredients:


Chickpeas 1 cup

Green Lentils 1 cup

Broccoli Florets 1 cup

Salsa Vegetables (I added Onion, Tomato, Capsicum) 1 cup

Lettuce 1 cup

Coriander leaves

Lime juice


Method:

  1. Soak Chickpeas and green lentils in water overnight. The next day, drain the water.

  2. Cook Chickpeas until soft.

  3. To a bowl, add green lentils, cooked chickpeas, steamed broccoli, salsa vegetables, lettuce and coriander leaves.

  4. Add salt, cumin powder, pepper powder and juice from half a lime. Add the mustard sauce. Mix well and serve.
