Salads 🥗 !!! They are an important part of a healthy diet. As they are loaded with vitamins, minerals, eating salads every day will improve the immunity and antioxidants in our body.
Today's post is "Salsa Pasta Salad". I have tried making different types of pastas and salads separately, but I have never tried this pasta salad combo. This was the first time I tried and it was awesome. It makes a complete meal of itself, very filling and most importantly healthy 💪.
Ingredients:
Pasta (I used Fusili pasta)
Red beans 1 cup
Garbanzo Beans (Chickpeas) 1 cup
Onion 1
Capsicum (I used red, yellow & green Capsicum) 1 cup
Broccoli 1 cup
Cherry Tomatoes 1 cup
Sweet Corn 1 cup
Juice from 1 lime
Cumin Powder 1 tsp
Chilli Powder 1/2 tsp
Sesame Oil 1 tsp
Coriander Leaves
Pepper Powder 1 tsp
Salt to taste
Method:
Soak red beans and Chickpeas overnight. The next day, drain the water and pressure cook them (adding little salt) for 4 whistles.
Cook pasta until a la dente.
Steam the broccoli and sweet corn.
In a bowl, add all the ingredients. Add lime juice.
Garnish with Coriander leaves. Mix and serve.
