Chickpea Salad with Cumin - Lime dressing

Imagine a salad š„ that is protein packed with the added goodness of lime and cumin. I know, it's tempting for sure šŖ. When you are a Vegetarian and you look for protein rich food, Chickpeas is an excellent option. Chickpeas is also called as "Garbanzo beans". They have a butter, nutty flavour and a creamy texture. It offers a lot of health benefits. To name a few:

āļø Controls blood sugar
āļø Boosts bone health
Chickpea Salad is a complete meal by itself. It is high in protein, low in fat. And with the lemon cumin dressing, it tastes heavenly.
Ingredients:
Chickpeas (garbanzo beans) 1 cup
Onion 1
Green Chilli 1
Coriander Leaves (Cilantro) handful
Juice from 1 lime
1 Tsp Sesame / Olive oil (I used Sesame Oil)
Cumin Powder 1 tsp
Pepper powder 1 tsp or as per your taste
Salt to taste
Method:
Soak Chickpeas in water overnight. Pressure cook them the next day with a pinch of salt. Once done, drain the water, keep the cooked chickpeas in a bowl & allow it to cool.
Prepare the cumin-lime dressing.
Add juice from one lime into a bowl. To it, add sesame / olive oil, pepper powder, cumin powder and salt. Mix well.
Add chopped coriander leaves, chopped onions, green chilli to the Chickpeas. To it, add the cumin-lime dressing (step 2). Mix well. Adjust salt if required.
Refrigerate it before serving. The more time the salad is allowed to stand, the more stronger flavor gets absorbed.
