Today's post is a simple Eggless Banana Walnut Muffin. Let's get on to the post.
Ingredients:
Ripe Banana 2
All purpose Flour 1.5 cup
Sugar 3/4 th cup
Oil 1/2 cup
Lemon Juice 1 tsp
Baking Powder 1/2 tsp
Baking Soda 1 tsp
Walnut Chopped 1/2 cup
Vanilla Essence 1/2 tsp
Milk (Room temperature) 1/2 cup
Method:
1. Mash the banana thoroughly.
2.Add oil, vanilla essence to it. Mix them thoroughly.
3. Next add the powdered sugar to the above mixture and beat it until sugar blends well with them.
4. Next add the dried ingredients namely all purpose flour, baking powder and baking soda.
5. Mix them thoroughly adding milk until you get a semi thick cake batter.
6. Next add the lemon juice and give a quick whisk.
7. Add the chopped walnuts and give a quick mix.
8. Pour them over the muffin tray with paper liners. Sprinkle some walnuts over the top.,
9. Pre-heat the oven to 190 degree Centigrade.
10. Bake for 25 to 30 minutes. When you insert a toothpick, it should come out clean. That's when the muffin is baked properly.
11. Enjoy with hot coffee.
