Life is too short to say no to cakes, isn't it? So today's post is a simple fruit and nuts cake which is

✅ Eggless
✅ No Oven
✅ Made in pressure cooker.
Sounds interesting isn't it? Let's get on to the recipe.
Ingredients:
All Purpose Flour 1.5 cup
Sugar 1/2 cup
Nuts & Dry fruits of your choice (I used Cashewnuts, dates, walnuts, figs, cranberries, raisins and tooty fruity)
Baking Powder 1 tsp
Baking Soda 1/2 tsp
Cinnamon Powder 1/4 tsp
Cardamom 1 pod (powdered)
Lemon Juice 1 tsp
Ghee 3 tsp
Vanilla Essence 1 tsp
Orange Juice 1 cup
Method:
Prepare the nuts and dry fruits:
Chop all the nuts into very small pieces.
Soak them in a cup of orange juice.
Keep it refrigerated overnight.
Prepare the Caramel Syrup:
Add sugar to a pan and 2 tbsp water.
Stir them well. Bring the solution to boil.
Keep stirring it continuously until the sugar begins to caramelize.
Once it begins to caramelize, add 1 cup water and keep stirring it until all the hardened caramel is dissolved thoroughly.
Switch off the flame. The caramel solution is ready.
Prepare the batter:
Add all the dry ingredients namely sieved flour, cinnamon powder, cardamom powder, baking powder and baking soda to a bowl. Mix it well.
To it, add the soaked dry fruits (along with the orange juice). Mix well.
Next add vanilla essence, ghee and the Caramel Solution and whisk them thoroughly for a couple of minutes.
Add the lemon juice. Whisk it once.
The cake batter is now ready.
Dust the cake mould (or any vessel that you would like to use for baking) with little flour and ghee.
Transfer the cake batter to the cake mould or any vessel of your choice.
Prepare the Cake:
Place the empty pressure cooker on the stove.
Place a grill inside the cooker. If you don't have a grill, you can even use the carrot grater that you have (the taller one, not the flat one).
Close the lid of the pressure cooker (no need to remove the gasket).
Don’t put the whistle.
Heat it in medium flame for 5 to 6 minutes. This is equivalent to preheating the oven.
Place the mould on top of the grill. Close the cooker and heat in medium flame for 30 minutes to 35 minutes.
Open the lid and insert a toothpick and check if the cake has baked completely. No piece of cake should be stuck to the toothpick. That's when the cake is baked completely.
Switch off the cooker.
Cool the cake and then unmould them into a plate.
