Today's post is a simple yet delish Eggless Upside down Caramel Apple Cake made in pressure cooker.

Ingredients:
Maida or all purpose flour - 2.5 cups
Yogurt - 1/2 cup
Milk - 1 cup
Powdered Sugar 1.5 cups
Vanilla essence 2 tsp
Baking powder 1 1/2 tbsp
Baking Soda - 1/2 tbsp
Lemon juice 1 or 2 tsp
Cardamom powder a pinch
Butter or ghee - 3 tbsp
Sugar 1/2 cup
Apple slices (cut into wedges) 1 cup
Prepare the batter:
1.Dust the cake mould (or any vessel that you would like to use for baking) with little flour and ghee.
2. Prepare the caramel.
a) Add sugar into a pan.
b) Saute in low flame until the colour turns golden brown.
d) Pour the caramel into the cake mould.
3. Place the sliced apples over the caramel.
4. Prepare the batter.
a) Add all the dry ingredients namely powdered sugar, maida, baking powder and baking soda. Whisk it well.
b) Next add yogurt and whisk it well. Yogurt is the egg substitute which provides fluffiness to the Cake.
c) Add vanilla essence, ghee/butter, cardamom powder, milk and whisk them thoroughly for a couple of minutes. Please note that if you are adding butter, melt it and then add.
d) Add lemon juice and give a whisk. The cake batter is now ready.
5. Transfer the cake batter over the caramelized apple (step 3).
Method:
1. Place the empty pressure cooker on the stove.
2. Place a grill inside the cooker. If you don't have a grill, you can even use the carrot grater that you have (the taller one, not the flat one).
3. Close the lid of the pressure cooker (no need to remove the gasket).
4. Don’t put the whistle.
5. Heat it in medium flame for 5 to 6 minutes. This is equivalent to preheating the oven.
6. Place the mould on top of the grill. Close the cooker and heat in medium flame for 50 minutes to 1 hr. [For the amount of ingredients that I used, it took 50 minutes for the cake to be baked completely].
7. Open the lid and insert a toothpick and check if the cake has baked completely. No piece of cake should be stuck to the toothpick. That's when the cake is baked completely.
8. Switch off the cooker.
9. Cool the cake a little and then unmould them into a plate.
A yummy, soft caramel upside down apple cake is ready.
Tip:
Dont allow the cake to cool so much, because if it cools completely, the caramel would stick to the mould itself. So, flip while it is warm.
