Herbed Potatoes

Potatoes !! Who doesn't love potatoes? Be it a simple stir fry, or a salad or even a patty, potato is a wonder vegetable. So instead of making the usual potato recipes, wanted to make something that is healthy and at the same time delicious to our taste buds. Tried this herbed potatoes. And it was delicious.
This is a dish made with potatoes sauted in herbs and spices.
The herbs/spices that are used are
Lemongrass -> used to treat insomnia, stomach disorder, respiratory disorders and infections.
Carom Seeds -> aids in digestion, reduces acidity, boosts respiratory health.
Pepper -> improves digestion, has anti-cancer properties, provides respiratory relief and rich in antioxidants
Cumin -> boosts immunity, reduces the risk of diabetes, lowers cholesterol.
Turmeric -> anti-inflammatory, can prevent cancer, fights inflammation, boosts immunity.
Oregano -> boosts immunity, aids in digestion and anti-cancer potential.
So we can see that all these herbs/spices helps in boosting immunity and aids in digestion. "Building immunity" is the need of the hour today. So why not make this simple yet healthy dish and build our immunity?
Ingredients:
Potatoes 6 to 7 medium sized
Cumin powder 1/2 tsp
Lemongrass powder 1/2 tsp
Pepper powder 1/2 tsp
Turmeric powder a pinch
Carom Seeds (Ajwain) powder 1 tsp
Orgenano powder 1/2 tsp
Mustard Seeds 1 tsp
Cumin Seeds 1/2 tsp
Lemon Juice 1 tsp
Coriander leaves few
Salt to taste
Oil
Method:
Boil the potatoes. Peel the skin and chop them into pieces.
Heat oil in a pan.
Once hot, add mustard seeds and cumin seeds.
Add the chopped potatoes and saute it in medium flame for 5 to 7 minutes.
Next add salt, ajwain powder, cumin powder, pepper powder, turmeric powder, oregano powder and lemongrass powder.
Saute until the above herbs/spices gets blended with the potatoes well.
Switch off the flame and garnish with coriander leaves.
To add an extra lemony tinge, you can add a little amount of lemon juice.
